Bok Choy Slaw

CSA Vegetables: 
Bok Choy
Carrots
Cilantro
Ingredient List: 
1 head Bok Choy 1 cup carrots, shredded 2 tbl vegetable oil juice of 2 lemons zest of 1 lemon handful of cilantro, chopped 1 tbl grated fresh ginger salt and pepper to taste
Directions: 
remove the leaves from the Bok Choy and slice the white parts in thin strips place in a colander, sprinkle Bok Choy with salt, fit with a plate with a heavy object on top, allow to drain. in the meantime, mix together remaining ingredients and toss add Bok Choy serve chilled
