Ingredient List:
½ cup lemon juice
3 cloves garlic, minced
1 tsp dried basil
1 tsp dried tarragon
1 tsp dried thyme
4 tilapia fillets (can substitute almost any white fish)
2 small zucchini (or summer squash), thinly sliced lengthwise
1 tbsp margarine
¼ tsp salt and ground black pepper
Directions:
1. Combine garlic, lemon juice, and herb in medium bowl. Add fish, cover and marinate in fridge for 15 minutes
2. Remove fish from marinade (reserve marinade). Spray 12x12” sheet of aluminum foil with cooking spray. Place 2 fillets on the foil sheet, top with half of zucchini. Repeat layering with another layer of fish and then rest of zucchini
3. Sprinkle chinks of margarine over the top. Sprinkle with salt and pepper
4. Bring foil up on both sides and seal. Place on baking sheet and bake at 400 degrees F for 20 minutes.

I posted that a while after last making it. I forgot to add that you might need to open the tinfoil and cook it for a while longer - aluminum foil sometimes seems to insulate food too well.
