Pork Ong Choy in Red Curry

CSA Vegetables: 
Ong Choy (Chinese spinach)
Ingredient List: 
½ lb pork, thinly sliced 2 medium sized bundles of ong choy sliced (can substitute with spinach) 3 tbsp red curry paste 1 can coconut milk 2 tbsp fish sauce, or to taste 2 tbsp sugar 2 fresh red chile peppers (optional)
Directions: 
1. In wok/pan over low heat, add coconut milk and red curry paste. Stir and mix well for 4-5 minutes. Add sugar and stir for another minute 2. Add pork and cook until almost done. Cover and simmer under reduced heat. 3. Stir in ong choy, red chili pepper and fish sauce to taste. Cook for another 5 minutes and then serve.
