Sour Cream Gooseberry Pie

Recipe Description: 
A nice easy pie with a sweet and tart flavor. You can sustitute fresh currants for the gooseberries if you don't have enough.

Ingredient List: 
1 1/4 cups fresh gooseberries (can substitute fresh currants), 1 cup sugar, 1 recipe pastry for a double-crust pie, 2 tbsp flour, 1 pinch salt, 1 cup sour cream, 2 eggs, beaten, 1 tsp vanilla extract.
Directions: 
1. Preheat oven to 350F. 2. In a medium bowl, gently stir together berries and sugar. Let sit 15 minutes. Press one crust into the bottom of a 9" pie plate. 3. In a meduim bowl, mix together the flour and salt. Mix in the sour cream, eggs and Vanilla. Add the gooseberry and sugar mixture and stir to coat evenly. 4. Bake for 55 minutes in the oven. Cool to room temperature and refridgerate before serving.
